Comfort Foods CAN be Healthy
Well, we’re in the thick of it guys. The middle of winter. The doldrums. Dark, chilly evenings at the end of too-short days. And if you’re like me, you crave comfort food. Foods like casseroles and stews that are hearty and fulfilling. But there are ways to create the dishes you long for and still maintain your New Year’s resolutions!
Tricks like swapping turkey burger for beef, using vegetables in place of meat, swapping out mashed potatoes for mashed cauliflower or skipping the bread to focus on the insides of a sandwich or burger can cut down on carbs and calories and STILL taste delicious.
Here are some of my favorite Healthier Comfort Foods!
This Healthy Shepherd’s Pie from The Modern Proper uses 90% lean ground beef and mashed parsnips for the topping!
Turkey burger, veggies and whole wheat bread crumbs make for tender meatballs in this Skinny Spaghetti and Meatballs recipe from Pinch of Yum.
Caraway seeds bring the flavor of Rye bread in this Keto Reuben Casserole from Farmstead Chick.
This Healthy Stuffed Pepper Soup from The Natural Nurturer uses ground turkey or chicken, along with quinoa and riced cauliflower as its base.
Whole wheat flour tortillas, and a to-die-for homemade sauce make for a scrumptious Healthy Chicken Enchilada dish from Eating Bird Food.
Once you figure out how to swap out lower calorie, lower carb foods for your classic favorites, the sky is the limit to what you can create for cozy winter meals!
