
Healthy Comfort Food
Yes, you heard me correctly…there really is healthy comfort food. If you live in the northeast or many other parts of the US, you’ve experienced record low temperatures over the last few weeks. I fight the urge to hibernate from November through March; if I had my way, I would stay holed up with a blanket, a cozy fire and stews, casseroles and hot chocolate for the entire winter.
Of course, that’s pretty much impossible but I have found a way to eat those yummy hot meals that you crave when it’s cold outside and not worry (too much) about my waistline.
