
Holiday Quick Breads
There’s no better time of year than this for baking quick breads. For one, at least here in the northeast, the chilly temps and 4pm sundown keep us inside more than usual (not to mention the pesky pandemic!). But also, quick breads are a quick and easy way to bake some tasty snacks or sides for your main meal. They can be easily frozen and thawed for later (think how BUSY you are the days leading up to Christmas.) One thing I like to do is cut my bread into slices, wrap it individually and then pop them in a big freezer bag and put them in the freezer. On any given morning, but especially one where I might not have much time, I can take a slice out, pop it in the microwave or toaster oven and voila…instant breakfast. Just about any quick bread recipe can also be turned into muffins, as long as you have a muffin tin. And they make great holiday gifts for friends and neighbors! Don’t hesitate to alter these recipes to your tastes. I swapped out walnuts for almond slivers in my zucchini bread the other day. Or if you don’t like blueberries, try raspberries or strawberries. Have fun with it!
