Holy Guacamole!

As some of you know, I like to entertain myself by checking the calendar sometimes to see what national day of importance might be coming up. September has some unique and interesting ones. For example, National Pet Rock Day was September 5th; September 24th you can celebrate National Punctuation Day, and a favorite of mine, on the 28th? National Drink Beer Day. But the one I’d like to focus on today is National Guacamole Day which is officially scheduled for later this week, on September 16th.

Guacamole, made from Avocados, is one of my favorite snacks. Although slightly high in calories and carbohydrates, this dense fruit is packed with vitamins and minerals such as Vitamin K, Folate, Vitamin C and Potassium to name a few. 78% of the carbs are fiber, meaning the net carbs are very low. Avocados also contain no cholesterol or sodium.

 

 

Now that I’ve sold you on the health benefits, think of all the things you can do with Guacamole. There’s the obvious use of dip for your tortilla chips. But I love to use guac in place of mayonnaise as a spread on sandwiches, as a side with an omelet or scrambled eggs, or spice up your grilled steak, fish or chicken by topping it with guacamole and home-made salsa.
