
Summer Squash Style
I’m just going to say it. It seems like Summer Squash doesn’t get as much attention as Zucchini. It’s like Summer Squash is the younger child to the popular older sibling, or the assistant to the CEO. Even when I google “Summer Squash Recipes”, half the ones that pop up, are actually Zucchini recipes.
And don’t get me wrong, I love Zucchini, and I love Summer Squash. And they are actually very similar vegetables. While most Zucchini is usually a longer, dark green cylinder with a similar shape from top to bottom, Summer Squash are typically a bright yellow color, with a skinny “gooseneck” and a fatter bottom. There’s a mild difference in taste, but both can be used interchangeably in recipes and often times are cooked and served together.
But, out of curiosity, I decided to find some recipes specific to Summer Squash and I wasn’t disappointed. So whether your own garden is brimming with this tasty golden veggie, or you’re in search of it at your local farm stand, here’s a few great ways to enjoy it!
