
Wrap It Up
It’s true, all the “cool” kids are doing it. Am I talking about some new fashion trend or dance craze? No, I’m talking about the new way to use a simple tortilla wrap. Rolling is out, folding is IN! If you follow social media (Facebook, Instagram, TikTok etc.) then it’s hard to imagine you haven’t seen this brilliant way to create an easy, fun, potentially even healthy meal.
How does it work? It’s so easy, I actually can’t believe we haven’t seen it before. Take a tortilla, almost any size but I prefer the 8 inch diameter. (Smaller might be best for young children, larger if you’re REALLY hungry!) Lay it out flat. Put a sharp knife in the center, and slice out to the end. Only slice once. Then take your fillings, and use each quarter of the tortilla for a different filling. Once you’ve placed your fillings on the tortilla, start by wrapping the quarter where you sliced it, onto the next side, and so on until you have a triangle. The options are endless. You can use your plain flour tortilla or get fancy with a spinach or tomato basil wrap. Fill with scrambled eggs, bacon, avocado and shredded cheddar. Or, a loaded veggie wrap with mushrooms, spinach, sprouts and sliced provolone. Got a sweet tooth? How about yogurt, raspberries, blueberries and granola? See what I mean?
