Spring Delights
As I look at the calendar and see that we are now closer to summer than winter I can’t help but think about some of my favorite spring recipes. It’s that time of year where there is a (very brief) window of opportunity for some of the freshest, tastiest produce of the season!
Some of my favorites include tart, red rhubarb, juicy sweet strawberries, crisp, savory asparagus and fresh, tangy radishes. There is almost no end to the numerous recipes available that take advantage of these fresh, flavorful fruits and veggies.

In my neck of the woods, you can’t bring up rhubarb and strawberries without discussing strawberry rhubarb pie! It’s a Memorial Day picnic staple, but if you’ve never had it (Gasp!) you don’t know what you’re missing.

Here, a fabulous strawberry rhubarb pie recipe, as well as some other tasty treats for spring!
Strawberry Rhubarb Pie (from Simply Recipes)
Strawberry Bread (from Taste of Lizzy T)
Almond Rhubarb Coffee Cake (from Allrecipes)
Asparagus Soup with Lemon & Parmesan (from Once Upon a Chef)
Asparagus Tart (from House of Nash Eats)

Radish Salad with Radish Top Pesto (from Love & Lemons)
Whether you’re hosting a barbecue, a dinner party, or just looking for something fresh and fun for your family, you can’t go wrong with these yummy spring dishes!
